Yet another delicious recipe from Veganomicon. To be honest I had no clue what a galette was. Apparently its a thin, freeform pie. Although, mine aren't exactly freeform...they're in the shape of a heart ♥
My next baking adventure was a jelly donut..cupcake style. First of all I would like to give a huge thanks to Madeline Krisko for letting me borrow Veganomicon. It is an amazing vegan cookbook and it just so happens to be where I found this delicious recipe.

And here is a pic of some mini s'mores cupcakes that I made last week.
For my first vegan baking experiment I decided to make s'mores cupcakes. It was a bit of a rough start. I accidentally knocked over a tub of flour...
Emma loved it : )
I used the s'mores cupcake recipe from Vegan Cupcakes Take Over the World. However, my first batch came out a little oily for my taste. For the next batch I halved the oil and used unsweetened applesauce for the rest. I also decreased the amount of molasses.
I ♥ Cupcake Wrappers
I topped the cupcakes with a super tasty and simple chocolate ganache recipe from The Conscious Kitchen. This is one of my absolute favorite vegan food blogs.
After the ganache cooled, I topped them off with a "buttercream" frosting, some graham cracker crumbs, and a little shaved chocolate. Unfortunately they disappeared before I could take a picture of the finished product. I will definitely be making them again soon.
Let's just pretend this is what they looked like : )
